Vegetable Curry with Cherries


  • 3 Tbsp coconut oil
  • 1 medium onion, diced
  • 2 Tbsp curry powder
  • 2 cups butternut squash, diced
  • 2 medium potatoes, diced
  • 3 cups cauliflower, small florets
  • salt and pepper
  • 3 cups vegetable broth
  • 1 can coconut milk
  • 3/4 cup dried cherries
  • chopped cilantro and peanuts for garnish

Stoneridge Orchards Vegetable Curry


  1. Heat the coconut oil in a large skillet over medium heat. Add onions and cook 3 minutes or until translucent.
  2. Add curry powder, stirring to coat.
  3. Add the rest of the vegetables and cook for 10 minutes until they begin to brown.
  4. Stir occasionally as they will stick to the bottom of the pan.
  5. Season generously with salt and pepper.
  6. Add vegetable broth, stirring and scraping up the brown bits on the bottom of the pan.
  7. Bring to a boil, cover, reduce heat and simmer for 30 minutes until the vegetables are tender.
  8. Remove from heat and add coconut milk and cherries, stirring to combine.
  9. Cover for 5 minutes.
  10. Serve over rice; garnish with cilantro and peanuts.
