Ice Box Blueberry Bran Muffins
Ingredients
- 1 cup 100% Bran
- 1 cup boiling water
- 1 cup butter
- 1.5 cups white sugar
- 2 eggs
- 1 pint buttermilk
- 2.5 cups flour
- 2.5 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups All Bran
- 2 packages of Stoneridge Orchards Blueberries
Directions
- Mix in all ingredients in the order listed
- Bake 15-20 minutes at 400 degrees
- Makes 24+ muffins
- Great for large gatherings; This great 1970's "ice box" muffin recipe gets its name because you can keep the mixture in the refrigerator for weeks, making warm muffins daily as desired.
