Baked Oatmeal Cups with Mixed Berries
Ingredients
- 3 cup old-fashioned oats
- 1 tsp cinnamon
- 1 tsp salt
- 2 tsp baking powder
- 4 Tbsp chia seeds
- 1/2 cup pumpkin seeds
- 2 Tbsp ground flax seed
- 2 Tbsp hemp seed
- 3/4 Stoneridge Orchards dried mixed berries
- 3 large eggs
- 4 Tbsp peanut butter
- 1 1/2 cup soy milk
Directions
- Preheat oven to 350°F
- Line a muffin tin with 16 paper muffin liners
- Combine all dry ingredients in a medium bowl
- In a separate bowl, whisk together eggs and peanut butter until smooth
- Slowly mix milk into egg mixture
- Pour liquid ingredients into dry and stir well
- Divide mixture evenly among muffin cups
- Bake 25-30 minutes or until dry and slightly browned
- Cook completely before serving
