Roasted Celery Root with Dried Cherries and Pecans


  • 2 medium celery roots (celeriac), peeled, cut into 1½" pieces
  • 2 tbsp olive oil
  • salt and pepper
  • 2 tbsp chopped toasted pecans
  • 1 tbsp fresh thyme leaves
  • 2 tbsp chopped dried cherries


  1. Preheat oven to 400 degrees.
  2. Toss celery root with oil on a rimmed baking sheet and season with salt and pepper.
  3. Roast until golden and tender, 20����25 minutes.
  4. Toss warm celery root with pecans, thyme leaves, and cherries.
