Leftover Turkey Salad
- 1 cup finely diced celery
- 2 1/2 cups leftover boneless turkey meat, diced
- 1/2 cup dried cranberries, finely chopped
- 1 tablespoon fresh thyme leaves
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/2 cup toasted chopped pecans
- Combine everything and chill. This is great to stuff into a pita, to serve over greens, or as a snack with crackers or fried wontons.
- Makes 4 cups.
