Cranberry Chutney with Pears Recipe
An elegant chutney recipe with cranberries, pears, orange juice, dried cherries, dried currants and cardamom.
Serves 4
Ingredients:
3 cups fresh cranberries,
2 cups finely chopped peeled pear (about 3 pears),
1 1/2 cups orange juice,
1 1/4 cups dried cherries,
2/3 cup packed brown sugar,
4 tablespoons dried currants or golden raisins,
4 tablespoons minced crystallized ginger,
1/2 teaspoon ground cardamom
Instructions:
1. Combine all the ingredients in a large saucepan; bring to a boil.
2. Reduce heat, and simmer for 10 minutes, stirring occasionally. Chill. Freezes well.
