A delicious chocolate dessert.
Serves 6
Ingredients:
2 cups white sugar,
1 3/4 cups all purpose flour,
2/3 cup unsweetened cocoa powder,
1/2 tsp. baking powder,
1 1/2 tsp. baking soda,
1 tsp. salt,
2 eggs,
1 1/3 cup milk,
1/2 cup vegetable oil,
3 tsp. vanilla extract,
1 cup boiling water,
1/2 cup butter,
3 cups powdered sugar,
2 packages of Stoneridge Orchards Montmorency Cherries.
Instructions:
1. There are two parts to this recipe. The first is the cake itself. The second part of the recipe is the frosting. First pre-heat the oven to 350 degrees. Grease and flour two nine inch round pans.
2. In a large bowl stir together the white sugar, flour, 1 cup of cocoa, baking powder, baking soda and salt. Add the eggs, 1 5 oz. package of Stoneridge Orchards Montmorency Cherries,1 cup of milk, oil and 2 teaspoons of vanilla extract, mix for 2 minutes on medium speed mixer or hand mixer. Stir in the boiling water last. The batter may appear thin or runny but this is intended. Pour evenly into the pre-greased pans.
3. Bake 30 to 35 minutes in the preheated oven until the cake tests done with a toothpick. Cool in pan for 10 minutes and then remove to a wire rack to cool before adding the frosting.
4. Prepare the frosting while the cake is cooking. Melt 1/2 cup of butter and stir in 2/3 cup of cocoa.
5. Alternate adding in 3 cups of powdered sugar and 1/3 cup of milk and then beat with hand mixer or blender until consistent.
6. Add in 1 teaspoon of vanilla extract.
7. Blend in one 5 oz. package of Montmorency Cherries until consistent and make ready for frosting on both layers of the cake.
8. Dress the top of the cake with the Cherries.
